With our “Snow Day” today in Minnesota, I figured, what better day than today to take the Magic Bullet out of the box (the one I got as a birthday gift 2 months ago…)!?
I decided to break it in with a festive pumpkin mousse snack! Okay, that’s a lie—I intended for it to be a smoothie, but when it came out with mousse consistency, I added a few chocolate chips and embraced it! 🙂 The great news is that it's not only delicious, it's PFC balanced, gluten free, dairy free, egg free, soy free, etc., etc. and it's gut healthy with the glutamine bonus! 🙂
Here's what I threw together (THE RECIPE!) for Pumpkin Mousse:
- 1/2 cup pumpkin (I used canned)
- 3/4 cup coconut milk (full fat)
- 1 spoonful (probably a Tablespoon) honey
- 1 scoop protein powder (~20 grams)
- 2 teaspoons Pure GlutaPowder™
- 1 teaspoon cinnamon
Optional (best part!): Topped with Enjoy Life chocolate chips… yum! Enjoy and stay warm!
